We ran a small batch of a special TRINITY BLEND:

Shirley soft red wheat + Maverick spelt + Wren’s abruzzi rye .. sifted to a high extraction. Like our regular Trinity, this is a pastry-forward all-purpose blend, though with spelt in place of the Appalachian White. This one is super special.
