This is an unsifted whole wheat bread flour (12% protein) made from a variety of hard white wheat known as Appalachian White. It was grown without chemical fertilizers or pesticides by fourth-generation black farmer, Patrick Brown of Brown Family Farms, in Henderson, NC . We are excited to work with Patrick, providing a market for his high-quality grains. Although the grain side of Patrick’s operation is not yet certified organic, this grain was grown without chemical fertilizers or pesticides. We are hoping to establish a long-term working relationship with Patrick that will substantiate the need for organic certification. Like many aspects of Carolina Ground, this is a story that is still unfolding.
