A provincial flour, rustic and yet refined, with about 20 - 30 parts sifted out. 

Our 75B is made from is made from hard red wheat variety Catawba- a regionally adapted hard red winter wheat grown on organic NC acreage in Wake Forest.

With about 25% sifted out of this flour, in formulas that call for whole wheat flour and 'white flour' consider simply replacing this place in lieu of the blend.
