This whole wheat pastry flour delivers the delicate softness of a pastry wheat and creamy flavor attributed to the white wheat it was milled from.

Made with soft white winter wheat grown in Newfield, NY on Oechsner Farms organic acreage, this old variety of white pastry wheat is called Harrus. We grow lots of soft wheat here in the Carolinas, but weather conditions were such that this past harvest of pastry wheat just did not quite make the cut for our quality standards. When that happens, we reach out to the greater community of regional grain endeavors. SO thank you Thor Oechsner for being there when we needed you. We’ve also planted some of this Harrus variety to see how it does down here, so fingers crossed to 2019 harvest.
