Our Trinity Blend is a mix of Appalachian White Hard White Winter Wheat, Wren’s Abruzzi Rye and Shirley Soft Red Winter Wheat, with an 84 extraction. This flavorful all-purpose flour is lovely in pastry application. A big winner in chocolate chip cookies and quick breads, pairs well with flavors such as orange, fig, honey, Earl Grey tea, and coffee. When using Carolina Ground flour, we recommend increasing the hydration in your recipe.
