This is our lightest rye flour with a 78 extraction. Formerly called crema rye, it is lovely in unique pastry application, pie crust, and cookies and pairs especially well with chocolate. When using Carolina Ground flour, we recommend increasing the hydration in your recipe.
Made from Wren’s Abruzzi rye grown on organic acreage in Wake Forest, NC. Non-GMO, unbleached, unbromated, and without additives.
