Welcome to our  blog! 

Carolina Ground Flour Mill is the result of a three-year grant-funded project known as the North Carolina Organic Bread Flour Project (NCOBFP). Launched in 2009 as an initiative of the Carolina Farm Stewardship Association, NCOBFP set out to link the farmer, the miller, and the baker in the Carolinas, with the goal of providing a viable market for SOUTHERN-grown, organic, hard and soft wheat and other small grains, AND improving our daily bread. It was an ambitious undertaking, but here we are [drum roll please...] CAROLINA GROUND!

Sweet Potato & CoConut Milk Waffles

It's totally that time of year for sleeping in past the alarm, stoking the wood stove and heating up the waffle iron. I recently inherited by Grandparent's Nordic Ware Belgian Waffler and it's become an almost daily mid-morning ritual. Nothing holds you over on a long cold day like a waffle. But don't take my word for it. Try it for yourself.

Sweet Potato & CoConut Milk Waffles: (makes apron. 8 1" waffles)

4 eggs, separated

1/2 teaspoon vanilla

3 tablespoons melted butter

1 cup Type 75 pastry flour

1/2 teaspoon salt

1/2 teaspoon nutmeg

1 cup coconut milk

1/2 cup cooked & mashed sweet potato

Preheat your waffle iron to the desired setting. Ready your toppings such as: whipped cream, sautéed apples, maple syrup, poached pears, toasted pumpkin seeds, yogurt and/or honey.

In a medium bowl beat the egg yolks. To this add the melted butter, vanilla and coconut milk. Beat again. In a separate bowl combine the type 75 pastry flour, salt and nutmeg. Whisk together. Add the dry to wet, folding to combine. Beat egg whites till still and then fold into waiting batter. Lastly fold in the cooked and mashed sweet potato. Gently whisk to incorpoarte the sweet potato. Pour onto a hot waffler.
