This is our high extraction flour, with 10 - 15 parts sifted out, this partially screened flour leans more towards whole grain than not, though it offers a big jump in performance. Increased hydration is recommended.

Made from a 50/50 blend of NuEast hard red wheat grown in Faison, NC on Burch Farms certified organic acreage and Oakes variety soft red wheat  grown on JRH Farms in Hickory, NC employing regenerative farming practices.
