FARMER + MILLER + BAKER

We offer a range of locally-grown and ground pastry, bread, and rye flour—as well as select whole grains—but Carolina Ground is more than just our mill. We are a network of organic farmers, bakers, and millers invested in sustainable food systems. We cold stone mill our grains in Western North Carolina for a regionally distinct flour that reflects our commitment to local excellence. For lovers of good bread, this means better bread. And for the farmer and baker, it means a tangible level of security and sustainability.

Together we continue building our knowledge of local grains in the field, in the bakery, and in the process, improving our daily bread from the ground up. 

FLOUR

All of our flours are stone ground and cold milled, unbleached, and unbromated.

OUR MILLS

 We use a 48” stone-burr gristmill built by Osttiroler—a small family-owned business in Austria and a 48” New American stone mill to cold stone mill our grains. In this slow rotation process the nutrient-rich germ is preserved and crushed into the starchy endosperm of the flour. This spreads the former’s oils throughout, imparting both flavor and nutrients to the end product.

Most modern mills employ industrial roller mill technology, whereby steel rollers strip away and separates out the bran from the germ and endosperm. While roller mills produce flour with greater efficiency and indefinite shelf life, the resulting product lacks the vitality, flavor, and punch of freshly cold stone ground flour.

JENNIFER

FOUNDER/GM

Jennifer (she/her) is a baker, a miller, an author, a wife, a mother and step mom, a sister, a fan of beagle mutts, bitter foods, long walks, and Belgian road bikes. She’s forklift certified and her favorite musical is A Chorus Line (though Hamilton is a close second).

ABBEY

RETAIL MANAGER/CREATIVE

Abbey (she/her) is a trained textile artist, specializing in natural dye techniques. Abbey recently enrolled in the culinary program at AB Tech and cares deeply about the intersection of community and food. We love her delicious bake-tests and the passion she brings to our space.

DAVID G.

MILLER

David (he/him) is a poet, writer, pastor, father, husband, songwriter, proprietor of a very cool British accent, and also now a miller. He and his wife Emilie are the wonderful folks behind Bryson Family Homestead (check out their beautiful wares at one of our pop-ups!).
